i keep seeing brothy rice bowls all over my feed, and as my whole family is obsessed w rice i knew i wanted to try it. and it was bomb 💣i will def make a variation of this again and potentially turn it into a real recipe. my only considerations: i did put a ton of broth but it really got soaked up quickly by the rice and therefore was not soup-esque. i would probably put less broth next time personally ! this is so versatile too in terms of the veggies you eat with it - i steamed the thinly peeled carrots and broccoli so they were hot and my daughters ate both veggies all mixed into their bowl (!) also if i could find my sesame seeds i would have added some on top - alas they are somewhere in kitchen reno storage mess 🙃👌✨

my daily salad ep. 25 |

if it aint broke don’t fix it!! the reason my salads all look sort of familiar is becuz i’ve figured out what a good salad means to me and i replicate it often 😅🥗🫡i stick to a few main ingredients honestly, im not getting fancy here with drastically different veggies all the time- becuz i buy veggies i know my family will eat and thus less food waste too 🫡 when i do depart from my usual i often find it doesn’t get finished (talking to you, half finished red cabbage, sitting in back of fridge). avocado, cucumber and tomatoes always make the short list becuz i also always have them in my fridge, they’re essentials. im not getting too precious about this! we use up what we have: only a bit of feta and a bit of halloumi so lets do both 👌 avocado was perfectly ripe so i ended up putting the whole one in there and letting it be more of a focal point for this salad.

my daily salad ep. 24 |

welcome back to my daily salad where i show you the realistic salads im making for my family ✌️🥗and they actually eat them ✌️

but maybe that’s just cuz i load it w fried cheese whenever possible 🤨this is a fried halloumi crouton salad in which the “croutons” are actually fried halloumi (in a litttleee bit of honey too ofc) chopped into bite size pieces, alongside cucumber and tomato and romaine lettuce. so simple but it’s so satisfying especially once you add a little bit of homemade vinaigrette. i do approx 1/4 cup of extra virgin olive oil, 1 lemon, 1/2 tsp salt & dried oregano, 1 tbsp dijon, 1 tbsp honey and sometimes a tbsp of apple cider vinegar too (roughly, you can’t rly go wrong w eyeballing this).

back on my yogurt bowl building bs!!! 

it’s been many months since i made my own yogurt and i truly miss it (and tbh im sure my gut does too 😓) while my kitchen was (and still is) under renovation, i was using my instant pot for daily meal needs like cooking rice and chicken so it had very little time to also double as my yogurt maker. now my oven and sink and dish washer are back i rly had no more excuses to not bust out the instant pot for some good ol fashioned yogurt making. if you’ve never made yogurt in the instant pot, it is actually so easy and ferment it for 24 hours to get ALLLLL the good probiotics, many millions more than what you can get from any storebought yogurt, even the probiotic-touting brands i promise. so that’s the first step. then you also have to simmer some frozen berries on the stove for 25-30 mins (homemade jam) and thennn also throw together some chopped nuts for some homemade granola and you’ve done the damn thing 🫡✌️💞🥣

hello 👋 just a quick intro or re-intro 👋

i’ve had crohn’s disease for over 20 years, before it became widely-discussed, before social media allowed you to find an IBD community and before a lot of research concerning inflammation, the gut, etc, was wiely dispersed (and disseminated with the prevalence of social media!). that being said, if these resources had been around when i was first diagnosed maybe it wouldn’t have taken me 10 years to actually *learn* about my own disease, my body, gut health, whole foods - i mean even understanding some fundamentals of food like what protein is lol. but then again, i was living my best life so its also possible i just wouldnt gaf until i got older 😅

that being said, having two kids has changed my eating habits. i still bake and cook from scratch, now with them at front of mind rather than myself. that’s okay too - we prioritize whole foods, and minimal sugar and processed ingredients. however, after years of being very strict i allowed myself some freedom to try food that i hadn’t been eating for years when i first got pregnant. part of this had to do with an actual need from my body (i wasn’t fueling myself enough, and i was running like 10k every day so iykyk). but part of that was a desire to kind of....chilll out on the restrictions and see what happened. i told myself i know how to get back there now. if i were to have a flare, god forbid, i know what i would do in order to take back some control and not rely fully on medication. (did i mention im also med free rn?? knock on wood!)
