my daily salad ep. 21 |

🥗follow @earth.to.rose for more salad inspo weekly!! 

today’s salad was for the whole family to enjoy and honestly we enjoyed it so much i made it again the next day !! and my daughter helped me make it which was a first, but i think it’s really good to have her helping me so she can see how we eat and what goes into preparing whole foods🥬and it makes her more excited to eat it when she has a hand in making it! maybe the next episode will feature amara’s helping hands 👋 🤝

this was not a traditional greek salad but it hit the spot, the dressing was 1/4 cup of evoo, one lemon juiced, a tsp of salt and pepper and a tbsp of honey and acv for anyone that wants to try it save this for later 💌

my fave kinda leftovers for lunch 🍚this recipe is my korean beef inspired bowls from my ebook 🙂‍↕️you can add different toppings depending on your preference. usually i also do green onions and sesame seeds. my kids are obsessed w it too and it’s so easy to make so it’s a win winnn🤝✨

banana muffins are an easy win with my toddler and my baby (is she a baby if she’s now 1?? or do i have two toddlers??). i love that these are grain free and refined sugar free (sweetened w honey) and my kids would never know 🙃😌🍌they taste legit and you can swap the raisins for choc chips if you’re feeling fancy 🍫my 1 year old may have ate three yesterday becuz she’s a fiend who cannot be stopped 🙅‍♀️this recipe is from my ebook but im including it below if you want to give these a try! save for later 💗

raisin or choc chip grain free banana muffins ingredients:

* 2 + 1/2 cups almond flour 
* 4 eggs 
* 2 very ripe bananas, mashed
* 3/4 cup honey 
* 1 tbsp pure vanilla extract 
* 1/4 cup oil of choice (coconut oil, olive oil, avocado oil all work)
* 1/2 cup raisins (sub refined sugar free dark chocolate chips)
* 1 tsp baking soda 
* dash of salt 
* 1/4 tsp nutmeg 
* 1 tsp cinnamon 

how to
1. Preheat oven to 350 F.
2. Begin by mixing all the dry ingredients together in a large bowl - almond flour, baking soda, salt, cinnamon, and nutmeg. 
3. In a small bowl, mash your bananas and then to the same bowl add in the honey, vanilla extract, oil (if coconut oil, soften it first), eggs, and combine.
4. Now add your wet ingredients into the dry ingredients bowl.
5. Combine well.
6. Fold in the raisins.
7. Prepare a muffin tin lined with parchment paper cups.
8. Pour the batter into the muffin tin, filling them up almost to the top.
9. Bake for 25 minutes, until golden brown.
10. Remove from oven and allow to cool completely.
11. Take out the muffins from the tray once cooled and store them in a tupperware in the fridge or freezer.

guys it’s episode 20 of my daily salad, by the time my kitchen is done being renovated we may or may not be at episode 40 😅🙃 jk (i hope). i was scrambling for salad ingredients for this one tbh so i decided to bust out the mozzarella and shred it up and honestly it was so good, i didn’t have any lemons for salad dressing so i did a creamy balsamic dijon that worked perfectly with the mozzarella, mushrooms, cherry tomato and pepper combo. my toddler even ate it (mostly the avocado though, i think she ate a whole half avocado on top of the one that was in the salad lol).
