my daily salad ep. 29 |

welcome back to another episode of my daily salad!! 🥗 today we had a family-sized salad featuring chopped broccoli (broccoli is lowkey an underrated and under-utilized salad addition, especially if you chop it finely and then just have little bits of broccoli florets to give texture and nutrients 🤝 so good!), sweet mini peppers, cucumber, avocado, and of course, LOTS of feta and LOTS of finely chopped parsley for the flavaa. the homemade vinaigrette consisted of olive oil, red wine vinegar (usually i do acv! switch it up!), a spoon of fancy dijon from @maisonorphee, honey, and salt, pepper, dried oregano. DELISH. go make a salad!

my daily salad ep. 28 | 🥗✨

let’s keep the good vibes going with another rice-salad creation putting my leftovers to work 🥗 i put this leftover white onion rice i made the night before in the oven with a chicken thigh (also from the night before) and chopped up my fresh veggies while it was warming up. throw everything in a bowl with your preferred salad dressing and you have something filling, but also satisfying and warming - perfect combo of cool and warm especially as it gets colder outside!! i love this too cuz you can essentially make a huge bowl and not be overly full. also if anything, my main problem with this particular salad was that it was TOO big for the bowl i put it in lol. it was just for me too even tho it kinda looks huge. but yeah it was delish. and we did this type of “combo” (that’s what my kids call it lol) for dinner too and the toddlers did in fact eat it ✅ and they get excited about mixing it all up ✅ (at least the 3 year old did, the 1 year old is still figuring out like, how to use cutlery).

welcome to: what i actually ate today ✨

which is, quite literally, a series where i show you what i actually ate *today.* as in the today that is today, the day the video is shared. i make food often, for my whole family in fact, daily. i cook, i bake. what i share video-wise daily is usually at least a couple of days prior becuz that’s how life is. you gotta get shit done and then find the time to edit and drop your video, so it’s not necessarily possible to share everything in a timely manner. im going to make an effort to shoot the low-lift things i make to eat any given day, and share it that same day. the goal of this series is to offer a glimpse at how my diet has evolved and what it *genuinely* looks like today. 

if you’ve been here since day 1, you know my roots in creating food content were SCD: i followed the specific carbohydrate diet closely, which is a grain free and refined sugar free diet, as i looked to maintain remission in my crohn’s disease. well, having two babies (under two) will sometimes have an effect on your diet 😅 and kudos to those who it doesnt loll. but while i still prioritize whole foods and make as much as i CAN from scratch, i also eat good ol’ fashioned flour and rice. the toast featured here is sourdough (not homemade although i would loveee to get into making my own if anyone knows a good place to start - im intimidated), and then i did all natural crunchy pb, a quick homemade “jam” which is really just mashed raspberries, and a drizzle of honey on top. can’t go wrong!!

helppp what do you think we should do w this moulding situation!!? the original wood trim was also a bit orangey which felt weird in this kitchen so even if we had done wood i would have preferred to go darker and moodier. but now we are relegated to paint, whats the best course of action?!

orange mango popsicles 🥭🍊 recipe below!!

this is a weekly occurrence at my house now and i’m not mad at it. it’s honestly such an easy thing to start making at home and then my kids are sooo excited about eating a popsicle and i am so happy to give them one knowing exactly what’s in it - only put a tbsp of honey in these ones and you could omit it entirely because the fruit is naturally sweet enough !! save this post to try the recipe below 💌✨👇🥭🍊

ingredients:
1 orange, peeled, fresh
1 cup yogurt
2 cups frozen mango
1 tsp vanilla
1 tbsp honey - optional

how to:
throw everything in the blender, i start w the orange and yogurt, and blend well. if you have some mango chunks that’s ok - my daughter loves finding a surprise mango chunk in her popsicles!
pour into your fave molds, freeze and enjoy guilt freeeee✌️

part 11 | renovating a small kitchen on a small budget

OMG HIIII yes i am still renovating my kitchen ty for asking 🥲 but it has to be a good sign if im making video content out of it again???!! right??? 🧐 we did take a break and do some other things, which included not renovating the kitchen and also not renovating the kitchen. is a kitchen renovation slump a worldwide phenomena or just us? 

we DID change our chandelier which was exciting, we actually found the one we installed in our crawl space so it feels very appropriate to the space. but royal has been working hard on the backsplash so i figured let’s do an update!!! we can see the finish line kinda 🏁 the backsplash is looking amazing, it needs to be grouted still, then it’s cabinet doors (we keep pushing those back lolll) and tiling the hood vent. and then the little pantry area. and then we’re done?? minus all the painting i have to do becuz thats where i can actually help. although i did hand royal like 5-10 tiles for the backsplash 🤝 

follow along to see the slowest kitchen renovation of all time come together!! but it’s my dream kitchen so idc 🙂‍↔️every piece that goes in and becomes more complete is another sigh of relief that i chose the right thing/ i love what i chose 😇

on today’s episode of my daily salad, a fun little anecdote about my 3 year old daughter who, when given the opportunity to request anything she wanted for dinner, confidently said “bread, chicken, rice and salad.” it’s worth noting she said this without a single hesitation lol. it’s also worth noting, she is STILL a toddler - although she does often eat salad, especially when it’s off my plate, this time around she actually refused 😂 win some and lose some!! you gotta keep serving to show them it’s the norm (also, i try to make them yummy for a toddler - so often times that includes some sort of cheese and avocado). that’s kinda why we’re in this situation in the first place. my preferred mode of vegetable delivery is through a salad so she’s been used to having it with her dinner since day 1.
