so pretty much once a week i like to take an extra chicken thigh (usually 2 but i only rly had 1 to spare from this pack) from a big pack and boil it for some fresh homemade broth i can use for the week’s dishes (rice, meats, pastas you name it broth is always good to have!!) freeze some too if you don’t need it all. i just do a big pot of water, at least one chicken thigh, and then spices and herbs - fresh or dried depending what i have, and apple cider vinegar (few tbsp). i did salt, basil, bay leaves and parsley. let it boil and then simmer for a few hours (or as long as you want). cool and strain if you want (i didn’t, only becuz i don’t care lol). store in some mason jars and voila! use the rest of the chicken for that night’s dinner. use the leftover boiled chicken to make some chicken salad for lunches 🤝🫡

(also yes my kitchen is still under renovation and very clearly unfinished 😅 and my sink has dishes in it 😘)

today i’m dropping a hot tip about how to make the best salad ~ever~ and honestly it’s probably a tip i’ve shared before, but you need to put a treat in your salad. and by treat i don’t mean candy sorry this is not a candy salad although i would really love to try making one one day maybe that’ll be the grand finale of this series😂 what I mean is that you need to put something in your salad that you’re excited to eat and that makes the salad itself exciting. get your family amped about salad by adding something like freshly cooked bacon, chopped up or in my case fried halloumi in honey. and it worked!! everyone loves fried cheese.

another week, another popsicle request from my toddler. this time it’s strawberry edition (and btw she already put in her request for the next flavour, which will be mango). these are sooo easy and fast to make and then my toddler and my baby both have a healthified frozen treat with minimal ingredients and way cleaner than any storebought version!!

easy creamy strawberry popsicles
1 can coconut milk
2 cups strawberries - i used frozen 
3 tbsp honey 
vanilla extract (optional - 1 tsp) 

blend everything together, pour into moulds, freeze and enjoy!

a quick and messy lunch, turning last nights tacos into a rice bowl and using up little bits of everything in the process. finished up the homemade guac 🥑✅ before it goes (too) brown (it was already brown as is evident in the video lol real life guac not always aesthetic). used up the homemade salsa and shredded lettuce i had prepped. leftover ground beef with fresh white rice cooked in homemade chicken broth. perfect way to make old ingredients feel new 🤝🫡

i tried making homemade salsa for the first time and it turned out so good i made it two days in a cuz we ate it ALL!🍅 i actually didn’t realize how easy it is and how much better it is than store bought?! like win-win 🤝

i also love a chunky salsa (and a chunky guac), so i didn’t use a food processor although i saw some recipes use it online. i prefer it this way. i measured it out the second time to include a quick lil recipe below, save it for the weekend just make sure you have some chips!! we used it for tacos one night and nachos the next. also really good to eat with a quesadilla! 

homemade salsa 
3 tomatoes, finely chopped 
1/8 cup finely chopped onion (i used red but white is good too)
just under 1 tbsp finely chopped jalapeño (add more for more spice, i wanted my kids to eat it lol)
just under 1 tbsp finely chopped fresh coriander 
1 clove garlic finely chopped or minced 
1 lime juice 
1/2 tsp cumin
1/2 tsp salt
tiny drizzle honey
