start by washing and slicing up your peaches into chunks – you can leave the skin on.
add to your blender (I use a Vitamix), and add 6-7 tbsp of water and 1 tbsp of honey. blend until well combined.
depending how strong your blender is, you may want to strain the peach juice through a fine mesh sieve. I did not need to strain mine – it is thick but will thin out with the lemon juice and water. set aside.
for your lemons, to get the most juice out of each, roll it along the cutting board before slicing and squeezing. squeeze all your lemons until you have around 200 ml of juice.
pour the lemon juice in a large pitcher, and add in the honey simply syrup mixture, the peach mixture, as well as four cups of cold water. if you find it too sweet, you can always add a fifth cup (or start with three, and taste test from there). i also added some thin slices of lemon and peaches to the pitcher.
place the pitcher covered in the fridge and allow to cool before serving. mix again before serving (you may need to mix again after letting it sit in the fridge for any amount of time).
serve with a fresh slice of lemon and peach as garnish.
